Training for Good Jobs with Food

This programme has been created by Food Academy and Chef Ben Purton with support of MasterChef Winner, Natalie Coleman to put people without employment in Tower Hamlets to great careers in the hospitality industry.

Chef Ben Purton has been executive Chef for Selfridge, Hyatt Regency-The Churchill, Goldman Sachs, The Royal Horseguards & Royal Lancaster Hotel.

As well as gaining practical culinary skills, participants will gain transferable skills such as time management, a healthy lifestyle, teamwork, budgeting and communication.

 This programme has 3 stages:

 (1) Hands-on Culinary and Job Readiness training (3 weeks)

  • Workshops start on the 29 April 2019 and run Monday to Friday 9.30am to 3.30pm. Transport and lunch is provided.

  • Training covers:

    • Basics in professional cookery such as: knife skills, baking, vegetables, sauces & soups, poultry & meat, fish & shellfish, cold & hot desserts, baked products, menu planning and costings.

    • Overview of the impact of food in everyday life from healthy eating to seasonality, to sustainability and cooking on a budget.

    • Food Safety Level 2 Certificate (subject to test).

    • Training on CV writing and job interviews, including preliminary job interviews with recruitment professionals.

    • Exciting learning visits to the restaurants and kitchens of the Hyatt Regency Hotel in Central London and other food establishments.

    • Final assessment by a professional Chef assessor, includes cooking a three course restaurant-standard meal.

(2) On the job training in top hotels and restaurants (3 weeks)

  • Starts on 20th May (on completion of the culinary training) Monday to Friday (transport costs will be refunded).

  • Work placement providers has been selected to maximise on the job learning experience, including different roles in the hotel, restaurant and kitchens.

  • Training concludes with a job interview leading to an employment offer.

(3) Jobs!: One to one assistance to match participants with job offers

  • Programme will support individual action plans to ensure that all participants receive job offers that are suitable (including a London living wage package).

  • Programme will follow up the participants for two years and provide support as needed- including evaluation and feedback data.
