A five-day intensive course aimed at chefs and business owners who wish to learn the authentic art of making ‘the real Neapolitan pizza’! This is an unmissable professional course, certified by Don Antonio Starita, the internationally acclaimed author of the official Pizza Guide, used by all Master Pizzaiolos.

The course will take place in Spring 2017. At the end of the course, you will have a thorough knowledge of Neapolitan pizza in all its aspects and participants will receive the Master Pizzaiolo Starita-Bellavita Academy Certificate.

The course lasts 30 hours, six hours a day from Monday to Friday. You will learn:

*Techniques and secrets for a traditional dough

*How to leaven your dough

*Cutting, shaping and rolling into balls

*Opening and stretching the dough

*Usage of flavourings

*Creating the perfect oven

*Cooking and managing the pizza in the oven
